Orange Hot Cross Buns 1 1/2 c hot orange juice 1 c soft butter, cut up 1 c sugar 1 t cinnamon 1 t salt Pour hot OJ over other ingredients in a large bowl. Cool to slightly above lukewarm. 8 pkg yeast 1 c lukewarm orange juice Dissolve, stirring well 6 eggs, beaten slightly Add to butter mixture. Add yeast mixture 1 c raisins 1 c candied or diced dried fruit 2 T grated orange peel Add: 8-12 c flour Beat in 8 c flour and knead, adding more flour as necessary (around 3-4 c). Put in buttered largest bowl and let rise, covered with a cloth, in a warm place for 2 hours. Punch down. Form 3 dozen balls, let rise on baking sheets 1 hour. Bake at 350º for 20 minutes. Glaze 2 c powdered sugar 1 T grated orange rind 1 ½ T boiling orange juice Beat together. Make a cross on each bun.
