Chocolate Almond Logs 1 cup sugar 1/2 cup plus 1 teaspoon vegetable shortening divided 1/2 cup butter or margarine softened 1 egg 1 teaspoon almond extract 2 1/2 cups all-purpose flour 1/2 cup unsweetened cocoa 1/2 teaspoon salt 1 cup vanilla baking chips 1 cup chopped almonds Heat oven to 375 degrees. In large mixing bowl combine sugar, 1/2 cup shortening, butter, egg and almond extract. Beat at medium speed of electric mixer until light and fluffy. Add flour, cocoa and salt. Beat at low speed until soft dough forms. Shape 1 measuring tablespoon of dough into 2 1/2 inch log shape. Repeat with remaining dough. Place logs 2 inches apart on an un-greased cookie sheet. Bake 9 to 12 minutes or until set. Cool completely. Frosting In 1 quart saucepan combine vanilla chips and remaining 1 teaspoon of shortening. Melt over low heat stirring constantly until melted. Dip one end of log into melted chips then roll dipped end in chopped almonds. Place logs onto cooling rack or waxed paper. Let dry completely before storing.
