Calico Bean Casserole 1/2 lb. lean bacon 3 cups thinly sliced onions 3/4 cup firmly packed brown sugar 1/4 tsp garlic salt 1/4 tsp dry mustard 1/2 cup catsup 1/4 cup vinegar 1 (1 lb.) can pork & beans 1 (1 lb.) can butter beans with ham 1 (1 lb.) can green baby lima beans drained 1 (1 lb.) can red kidney beans drained Cut bacon into 1 inch pieces. Fry bacon and drain off all but 3 tablespoons of drippings in skillet. Stir in onions, brown sugar, garlic salt, dry mustard, catsup and vingar. Simmer 20 minutes. Stir in beans and half of the crisp bacon pieces. Spoon into a large (3 quart) shallow casserole dish. Sprinkle remaining bacon pieces on top. Cover and bake in 350 degree oven for 50 minutes. Remove the cover and bake 10 minutes longer. Makes 10 - 12 servings
