Bacon Potato Salad 6 - slices bacon 4 -eggs beaten 4 - tablespoon sugar 4 - tablespoons vinegar 1 - tablespoon flour 1 - tablespoon bacon drippings 8 - boiled potatoes diced 1 - cup celery chopped 4 - hard-boiled eggs diced 1 - tablespoon onion grated 1 - teaspoon celery seed 1 - cup prepared salad dressing 1 - cup heavy cream 1 - teaspoon salt In a skillet at moderate heat, fry bacon, remove, drain bacon on paper towel, and crumble. In a saucepan at low heat, add eggs, sugar and vinegar. Whip in the flour and cook until mixture thickens. Add the bacon drippings, blend and allow to cool. In a bowl, combine the potatoes, celery, hard-boiled eggs, and mix. Next, add in the onion and celery seed. Sprinkle bacon on top. When dressing has cooled, add the salad dressing, cream, and salt. Thoroughly beat the dressing. Pour over potato mixture and well mix. Makes 12 servings.
